How To Skin A Deer

1. Cement a 2-inch-diameter iron eye bolt in the floor of your skinning shed and attach a pulley or meat hook to the ceiling directly overhead three to five days before your hunt, if you do not already have them in place.

2. Cut off all four lower legs at the knee joint on your field-dressed deer. Slide your skinning knife under the hide on the inner part of each upper leg. Make vertical slits up each leg, all the way to the cuts made at the pelvic bone and chest when you field-dressed your deer.

3. Slide your skinning knife under the hide, beginning at the top of the slit made from tail to neck. Slit the hide all the way around the neck.

4. Place a golf ball or round stone on the hide at the back of the neck and roll the hide over it two full turns. Pinch the hide together around the ball and wrap one end of your 2-foot piece of heavy rope around it three to five full turns. Pull tight and knot the rope as tight against the ball as possible.

5. Tie the other end of the 2-foot rope to the ring in the floor, pulling the balled hide tight against the ring. Loop the 20-foot rope around the flesh of the neck of your deer twice and knot it.

6. Run the other end of the 20-foot rope up and over the pulley or ceiling hook. Pull the carcass up to the ceiling using smooth, even force so the hide peels away.

7. Mix 2 quarts apple cider vinegar to 2 gallons water, which is a 1-part to 4-part ratio. Rinse the body cavity and outside of the carcass with the vinegar solution and allow it to drip dry for 15 minutes. Flush the entire carcass with clean water and pat the meat dry with clean paper towels.

8. Pepper the entire carcass inside and out and cover it with a meat shroud. Pack the carcass in ice and take it to your meat processor as soon as possible if you are not going to butcher it yourself.

9. Split the underside of the tail along its entire length. Turn the hide flesh-side up and scrape or peel away any flesh or silver skin still attached to the hide, if any. Lay the hide on a flat surface with a slight tilt and salt the entire hide, using one pound of non-iodized salt for every pound of hide.
